Welcome! We are Miran and Fred Schang, the proprietors of the Iron Rooster. Originally from the East Coast we decided in 2016 to leave our high stress careers for the sweeter climes of Washington state.
Miran has been baking for many years and was classically trained by the French Culinary Institute in New York. She has worked in fine restaurants, bakeries and catering kitchens. She even owned her own bakery in western New Jersey named Sweet Potion.
Wherever she has baked she has brought an artistic, thoughtful and uncompromising ethic to her product. Everything should be the finest it can be!
Fred has had a long career with CNN as a photojournalist and has traveled extensively domestically and internationally, covering the news for the network. He was one of the pioneers helping to create 24-hour cable news coverage.
We both fell in love with the town of Bellingham after looking at several western states and cities. We opened the Iron Rooster Bakery in Fairhaven in June 2017 and were warmly welcomed into the community. Many locals and visitors alike frequent the bakery and enjoy our delicious fare.
Our hand-shaped croissants are of the highest quality. These are our foundation from which everything else springs. We use the best chocolates from Europe to create our Pain au Chocolat, Cakes and Ganache.
Iron Rooster Bakery employs seven young Bellingham workers whom we are very proud of and love to spend time with. Their service is an added bonus and brings a smile to the art of pastry and coffee!
